Ingredients
    For the Chicken:
  • 650 g chicken breasts (about 4 breasts)
  • 3 tbsp Greek yogurt
  • 1 tbsp mild curry powder
  • For the Sauce:
  • 6 tbsp mayonnaise
  • 3 tbsp Greek yogurt
  • 3 tbsp mango chutney
  • 2 tsp mild curry powder (add 1 tsp more if you prefer a stronger taste)
  • 1/8 tsp ground cinnamon
  • 1/8 tsp salt
  • 1/8 tsp white pepper
  • 50 g 50 dried apricots, chopped into 1 cm pieces
  • 2 tbsp sultanas
Instructions
    Prepare the Chicken:
  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, mix the chicken breasts with Greek yogurt and curry powder until well coated.
  3. Place the chicken on a baking tray lined with foil or greaseproof paper.
  4. Roast the chicken for 18-20 minutes, turning halfway through. Ensure the chicken is cooked through by checking with a thermometer.
  5. Set aside to cool.
