If using dried borlotti beans, soak them overnight in plenty of water. Drain and rinse before cooking.
In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic, rosemary, thyme, and bay leaf. Cook for another 2 minutes until fragrant.
Stir in the cherry tomatoes and tomato paste. Cook for 5 minutes until the tomatoes start to soften.
