Ingredients
  • 500 g borlotti beans (shelled)
  • 1 large onion (finely chopped)
  • 3 garlic cloves (minced)
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 1 bay leaf
  • 200 g cherry tomatoes (halved)
  • 1 tbsp tomato paste
  • 3 tbsp extra virgin olive oil
  • 1 tsp red wine vinegar
  • Salt and pepper (to taste)
  • 1 liter water (or enough to cover the beans)
  • Fresh parsley (chopped, for garnish)
Instructions
    Preparation:
  1. Soak the Beans

    If using dried borlotti beans, soak them overnight in plenty of water. Drain and rinse before cooking.

  2. Cooking:
  3. Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

  4. Add Garlic and Herbs

    Add the minced garlic, rosemary, thyme, and bay leaf. Cook for another 2 minutes until fragrant.

  5. Add Tomatoes and Paste

    Stir in the cherry tomatoes and tomato paste. Cook for 5 minutes until the tomatoes start to soften.

  6. Cook the Beans

    Add the borlotti beans to the pot and pour in enough water to cover them. Bring to a boil, then reduce the heat to a simmer.

     

  7. Simmer

    Cover the pot and let the beans cook for about 35-40 minutes, or until they are tender. Check occasionally and add more water if necessary.

  8. Season

    Once the beans are tender, stir in the red wine vinegar, salt, and pepper to taste. Let the stew simmer for another 5 minutes.
