1 large cucumber, cut into small chunks
250ml plain yogurt
1/2 teaspoon dried mint or 1/2 teaspoon finely chopped fresh dill
1 clove garlic, crushed
1. Salt the cucumber and leave for 30 minutes. Rinse and pat dry.
2. Mix the yogurt with the mint or dill, add the crushed garlic, stir and add the cucumber. Toss gently. Taste and add a little salt if it needs it. Chill until you want to use it.
