– Adding salt to the water when you are boiling potatoes can cause them to split. Instead drain them and then season.
How to make Smashed or Crushed Potatoes:
If the potatoes do split and collapse despite your best efforts, it’s not a bad thing: drain, then smash them lightly with a fork, fry them in olive oil and the potatoes will become delightfully crispy. Clever chefs call them ‘Crushed Potatoes’ on the menu! It’s a good way of using up leftover potatoes too.
