Cherry tomatoes with balsamic vinegar dressing

Use vine tomatoes which have been left to ripen on the plant, making them sweeter. Mop up the juices with good bread.

Serves 4


16 vine cherry tomatoes
2 tablespoons olive oil
1 tablespoon good balsamic vinegar
Salt and freshly ground black pepper


1. Place the tomatoes in an oven-proof dish. Drizzle with the olive oil and balsamic vinegar. Season with salt and black pepper.

2. Bake in a preheated oven at 200C/400F/Gas 6 for 10-15 minutes or until soft.
