Middle-Eastern Carrot, Orange and Cumin Salad

A fresh salad made from simple ingredients – one to make to use up the last few carrots in the bag and any oranges you have on the kitchen counter that are on the turn.


2 large or three medium oranges
4 medium carrots, peeled
Juice and zest of half lemon
1 teaspoon cumin seeds, lightly toasted
1 tablespoon caster sugar


1. Remove the peel and any white pith from the oranges and slice into segments, reserving the juice.

2. Grate the carrots and place in a bowl with the orange segments, any juice that has come out of the oranges, the lemon juice, cumin and sugar. Leave to marinate in the fridge for at least hour before serving.
