Cook the egg noodles in salted boiling water until soft.
Drain and run under cold water, then let them dry out in a colander. Dry noodles stir-fry better than wet ones.
In a small bowl, mix together the light soy sauce, dark soy sauce, oyster sauce, brown sugar, rice vinegar, and honey. Set aside.
In a wok or large pan, heat the vegetable oil over medium-high heat.
Add the garlic, ginger, and chilli to the wok and stir-fry for about 30 seconds until fragrant.
Add the prawns and broccoli to the wok. Stir-fry for 2-3 minutes until the prawns start to turn pink and the broccoli is tender but still crisp.
Add the noodles to the wok, followed by the prepared sauce. Toss everything together to ensure the noodles are well coated with the sauce.
Drizzle the sesame oil over the noodles and give everything one final toss.
Transfer the stir-fry to serving plates.
Garnish with finely sliced spring onions and sesame seeds if desired. Serve immediately.
