Irish Jambons are a delightful savoury pastry that combines flaky puff pastry with a rich filling of ham and melted cheese. Perfect for breakfast, a snack, or any time you crave something warm and comforting, these pastries are simple to make and even easier to enjoy.
Melt the butter in a saucepan over low heat.
Stir in the flour to form a roux and cook for 2 minutes, stirring constantly.
Gradually add the milk, whisking continuously until the mixture thickens and comes to a boil.
Season with salt and pepper.
Remove from heat and stir in 100g of the grated cheddar cheese until melted and smooth. Set aside to cool.
Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
Roll out the puff pastry on a floured surface and cut each sheet into 6 squares, making a total of 12 squares.
Place the squares on the prepared baking tray and chill in the fridge for 10 minutes.
Remove the pastry squares from the fridge. Spoon a tablespoon of the béchamel sauce into the center of each square.
Top with diced ham and a sprinkle of the remaining cheddar cheese.
Fold the corners of each square towards the center and pinch them together to seal.
Brush each jambon with the egg wash and sprinkle with grated Parmesan cheese.
Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.
