Ingredients
    Meat Filling:
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 large onion, finely chopped
  • 2 carrots, finely chopped
  • 2 celery sticks, finely chopped
  • 750 g beef mince
  • 1/4 cup plain flour (40g)
  • 1/4 cup tomato paste (55g)
  • 2 cups beef stock, low sodium (500ml)
  • 1/2 cup red wine (or water) (125ml)
  • 1 beef bouillon cube, crumbled
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme (or 3 sprigs fresh thyme)
  • 2 dried bay leaves
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • Mashed Potato Topping:
  • 1 kg 1.2 potatoes, peeled and cut into 2.5cm cubes
  • 2/3 cup milk, warmed (165ml)
  • 2 tbsp butter (30g)
  • 1/2 cup grated cheddar cheese (50g)
  • Salt and pepper to taste
Instructions
    Prepare the Meat Filling:
  1. Heat the Oil:

    Heat the olive oil in a large pan over medium heat.

  2. Cook Garlic and Onion:

    Add the minced garlic and chopped onion, cooking until softened, about 5 minutes.

  3. Add Carrots and Celery:

    Add the finely chopped carrots and celery, cooking for another 5 minutes until the vegetables are tender.

  4. Brown the Beef:

    Increase the heat to high, add the ground beef, and cook until browned. Drain any excess fat.

  5. Add Flour and Tomato Paste:

    Stir in the flour and tomato paste, cooking for 2 minutes.

  6. Add Liquids and Seasoning:

    Gradually add the beef stock and red wine, stirring constantly. Add the crumbled bouillon cube, Worcestershire sauce, thyme, bay leaves, salt, and pepper.

  7. Simmer the Filling:
