Spaghetti with Oil and Garlic (Aglio Et Olio)

A simple but truly authentic Italian dish – you can make it from store cupboard ingredients.

Serves 4 (recipe divides in half or doubles easily)

Ingredients

1 tablespoon extra virgin olive oil
1-2 cloves of garlic, finely chopped
1 teaspoon of chilli flakes or 1 tablespoon of chilli oil (use more or less to taste)
400g spaghetti, cooked in lots of salted boiling water
Freshly grated Parmesan to serve

Instructions

1. Add the olive oil to a frying pan or large saucepan. Add the garlic and chilli and sauté over a gentle heat making sure that you don’t burn the garlic.

2. Add the cooked spaghetti and toss well.

3. Add the grated Parmesan and serve immediately.
