A quick healthy chicken stir-fry with noodles for a mid-week dinner when you only have time to pick up the main ingredients from your local convenience store.
1 clove of garlic, peeled
1 tablespoon olive oil
2 chicken breasts, cut into strips
2 bulbs of pak choi or bok choi
1 medium carrot, peeled and cut into matchsticks
1 tablespoon oyster sauce
1 tablespoon light soy sauce
1 tablespoon sweet mirin
1 packet of flat noodles, cooked to pack instructions and drained (you can also use pre-cooked noodles)
1 teaspoon sesame oil
1. Fry the clove of garlic in the olive oil over gentle heat in a heavy pan or wok until the garlic is beginning to brown. Remove and discard it.
2. Turn the heat to high. Add the strips of chicken breast to the oil and stir fry for 2 minutes. Add the pak choi or bok choi and carrot and cook for 2-3 minutes.
3. Add the oyster sauce, light soy sauce and sweet mirin and cook until reduced and thickened. Add the noodles and toss – heat through. Check that the chicken is cooked through. Add the sesame oil and stir. Top with chopped coriander and toasted peanuts.
