Handy jam tips.
– Jam swells in the oven: when you are using it to fill tarts, always use less than you think is necessary and place the tart tin on a heated baking tray to catch any drips.
– When making jam, keep a close eye on the heat underneath the saucepan. It takes seconds for jam to boil over and it goes everywhere. If it does spill over, clean it up immediately with a damp cloth.
– Don’t waste the last spoon of jam in the jar – use it to top yogurt or fromage frais and add a sprinkling of toasted granola or muesli or some fresh fruit.
