A simple mustard dressing to serve with smoked salmon. Try spooning it on toasted sourdough bread, layering slices of smoked salmon on top and garnishing with watercress leaves.
200g sour cream
Juice of half a lemon
2 teaspoons caster sugar
1 tablespoon Dijon mustard
1 tablespoon olive oil
Pinch of freshly ground black pepper
1. Whisk all the ingredients together or put them in a glass jar with a lid and shake well.
– Use creme fraiche instead of sour cream.
– Adjust the flavourings to make it your own: use wholegrain mustard or a flavoured mustard instead of Dijon; add a little more lemon juice to make it sharper or less sugar to balance it to your taste. Add fresh chopped herbs – dill would be excellent as it is an ideal pairing with salmon.
