Traditional English Mint Sauce and Mint and Onion Sauce.
Traditional English Mint Sauce
6 level tablespoons good-quality redcurrant jelly
6 tablespoons red wine vinegar
8 level tablespoons chopped fresh mint
Salt and freshly ground black pepper
1. Heat the redcurrant jelly and vinegar in a saucepan until the jelly melts.
2. Add the mint, season, taste and adjust the seasoning if you need to. Pour into a serving jug. Eat cold.
Mint and Onion Sauce
1 large white onion, finely chopped
2 tablespoons of chopped fresh mint
A little sugar, if required
1. Cook the onion gently in the butter until it is soft. Don’t let it take on colour.
2. Blend the onion in a liquidiser. Mix in the mint, give it a quick whizz and season to taste. Add a little sugar if it needs it.
3. Serve warm or cold.
