Honey, Citrus and Brandy Ham Glaze

Save money on buying posh ham: turn a plain ham into honey roast ham with our Honey, Citrus and Brandy Ham Glaze.

Enough glaze for a ham for 6 people


60ml runny honey
1 tablespoon lemon zest
1 tablespoon orange zest
4 tablespoons orange juice
Juice of 1 lemon
1 tablespoon brandy
16 cloves


1. Mix all the ingredients except the cloves together to make the ham glaze.

2. Brush the ham with the glaze, keeping some back for basting, and stud the ham with cloves in a diagonal pattern. Follow the instructions to bake your ham, making sure to set it on a rack in a roasting dish and to add a few spoons of water to the dish so the glaze doesn’t burn. Baste the ham every 15 minutes with the glaze.

An easy way to glaze a baked ham

You can also brush the ham with glaze once it is cooked. Cook the ham as normal, remove it from the oven, brush the glaze over and stud it with cloves, put the ham back in the oven and cook for 15 minutes at 200C/400F/Gas 6.

Recipe variation

– Use a tablespoon of marmalade instead of the orange and lemon zest.

– Omit the brandy if you don’t have any or use a tablespoon of sherry instead.
