Fresh Mexican Salsa Roja

Salsa Roja is a spicy salsa from Mexico. Use it wherever you would use any salsa, in sandwiches, with grilled chicken, fried eggs or on avocado and toast. Keeps in the fridge for a few days in a covered container.


6 ripe tomatoes, deseeded and roughly chopped
2 garlic cloves, peeled and crushed
2 red chillies
10 stalks of fresh coriander (cilantro), roughly chopped
Squeeze of fresh lemon or lime juice
Sea salt to taste


1. Blitz all the ingredients together until smooth, adding salt to taste.
