Keep a bowl of this addictive dip in the fridge and you’ll always have something to snack on. Serve on toasted baguette or with strips of warm pita bread and top or fill with cured meat, watercress or rocket leaves, drizzle with honey and top with basil or sprinkle with toasted nuts.
100g feta cheese
4 tablespoons fresh ricotta cheese
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
Zest of half a lemon
Sprig of thyme or 4 mint leaves
1. Blend all the ingredients together with 1 tablespoon of cold water, adding more cold water if you need to. The texture should be creamy and thick.
