Cucumber Raita

Raita is a cooling Indian side-dish – this version is made with yogurt and cucumber but you can make it with banana too. It cools down a hot curry!

Serves 4

Ingredients

1 cucumber, peeled, chopped into small chunks and drained
300ml natural yogurt
Salt
Fresh mint, chopped finely to garnish

Instructions

1. Mix the cucumber with the yoghurt and add a little salt to taste.

2. Chill in the fridge and take out just before serving and garnish with mint.

RECIPE NOTES

– You can make a great raita with banana, just swop it for the cucumber – it’s excellent with a lamb curry.

– Add chopped or sliced red onion or shallot.

– Serve raita with our Curried Leg of Lamb or our Coriander Chicken Burgers or with Lamb and Mint Burgers.
