How to create thin fillets of fish without damaging the flesh.

– When you are pounding fish to flatten it, either to bread or batter it or so that it cooks more quickly, wrap it in cling film first.

– Spritz the inside of the cling film with water before you lay the fish on it as it will stop the fish sticking to it and tearing when you remove it.

– Place a plastic board under the fish to help to soften the blows – fish is delicate.

– Dip the fish in seasoned flour or cornflour and fry in oil and butter or place in an oiled baking dish and drizzle with oil or butter. Flavour the flour mixture with sea salt, freshly ground black pepper and dried herbs or chilli.
