How to roast cauliflower
1. Cut the cauliflower into florets, discarding the outer leaves and tough core.
2. Place the cauliflower on a baking tray and drizzle with olive oil. Season with salt and pepper and bake in a preheated oven at 200C/400F/Gas 6 for 25 to 30 minutes or until golden and easily pierced with a fork.
Quick recipe for cauliflower chicken with capers:
1. Preheat the oven to 200C/400F/Gas 6.
2. Fry chicken thighs on both sides in a pan with olive oil (3-4 minutes each side) until golden. Place the chicken thighs with cauliflower florets and small cubes of potato or butternut squash on an oiled baking dish. Season with salt and pepper, sprinkle lightly with dried mixed herbs and drizzle with olive oil. Roast in the oven for 30-40 minutes or until the chicken and vegetables are golden and cooked through. While the chicken is roasting, fry capers in olive oil until crisp and toss over the chicken when serving.
