– Pour cold water into the pan and bring it to the boil. The caramel will melt into the water and you can throw the water away, leaving you with a clean pan.
– When you are making caramel make sure to stir it as little as possible. Use a pastry brush to brush water down the sides of the saucepan but once the mixture boils, don’t stir it again. Instead, swirl the saucepan gently as it cooks until the caramel reaches the stage you need.
