Peaches with Amaretti Topping


Try this quick and easy dessert when you find peaches at a good price in the supermarket.


4 peaches, stoned and halved
2 tablespoons of Amaretto or orange liqueur
4 tablespoons cold water
4 Amaretti or ginger nut biscuits, crushed
Almond slivers, chopped
Mascarpone sweetened with caster sugar to serve


1. Poach the peaches in the liqueur and water until soft. Strain the peaches, slip off the skins (if you want to) and chill. Reserve the syrup.

2. Mix the crushed Amaretti or ginger nut biscuits with the almonds. Fill the peaches with the mixture and drizzle over the poaching liquid. Serve with the sweetened Mascarpone.
