How to stop custard over-cooking

A simple tip to stop the bottom of a delicate custard dessert over-cooking in the oven using a Jeyes cloth!

When you are baking a delicate custard in a bain marie or water bath, place a cloth underneath the ramekins before you half fill the tray with boiling water. The cloth will stop the ramekins from touching the baking tray which can result in over-done custard.

A clean Jeyes cloth or similar clean cloth is perfect. Rinse it in cold water before using it so it doesn’t dry out and burn in the oven.
