Baking whole or sliced rhubarb only takes 15-20 minutes. It keeps covered in the fridge for a few days.
How to bake rhubarb in the oven
1. Line a baking tray with tin foil. Place the whole or sliced rhubarb on the tray and sprinkle with caster or demerara sugar. Bake 200C/400F/Gas 6 for 15-20 minutes until the rhubarb is soft but not collapsing. Leave to cool or use immediately.
