Ginger Peach Pots

Here’s the proof that you don’t have to go to a lot of trouble to make a delicious dessert. You can use other tinned fruit such as pears or apricots too.

Serves 4


1 tin of peaches or 4 ripe peaches, stoned
2 piecea of crystallised ginger, chopped finely
8 tablespoons fromage frais or sour cream
4 ginger or Amaretti biscuits, crushed


1. Chop the peaches roughly and spoon into the bottom of plain glass tumblers.

2. Sprinkle over the crystallised ginger, spoon in the fromage frais and top with the crushed ginger or Amaretti biscuits.
