There are a few ways to separate an egg but our favourite by far comes from Greg at Greg’s Kitchen (hasn’t he got great energy?). You’ll need an empty plastic water bottle (and an egg of course).
How to separate an egg the traditional way:
– Use an egg separator – it ensures that you don’t get egg white in the yolk which is important when you are making meringues where any trace of egg yolk in the white may cause them to fail.
– Crack the egg shell in half and pour the egg yolk from one half of the shell to the other half.
– Break the egg into a bowl and carefully lift out the egg yolk with a clean hand and place it in another container.
– Separate eggs individually so that if the yolk breaks, you only lose one egg, not the whole batch.
