How to stop cakes becoming ‘sticky’

What’s the point of making a lovely cake only to find that it has become sticky when you remove it from the cake tin?

– If cakes consistently get sticky when you keep them in a cake tin, then you may be storing them somewhere that is too humid. Store cake tins out of the sun in a cool dark place.

– Place a piece of parchment paper or silicone paper at the bottom of the cake storage tin so you can lift out the cake easily. Cut a piece of silicone that fits the tin exactly: you can rinse it out when the cake is eaten and place it back in the tin ready for the next cake to arrive.

– Make sure that the cake has fully cooled before you place it in the cake tin – a cake that is cool and dry going into a tin has a better chance of reappearing in its perfect state.
