These little bites are the perfect size to give you an energy boost. Pack them into a lunchbox or eat one or two if you miss breakfast.
80g mixed fruit and nuts
Juice of half an orange
Zest of half lemon
20g desiccated coconut
15g puffed rice
1. Preheat the oven to 180C/350/Gas 4.
2. Whizz the dates, cranberries and fruit and nuts in a food processor. Add just enough of the orange and lemon juice while the motor is running, to make the mixture clump and grip the side of the bowl.
3. Stir in the lemon zest, desiccated coconut and puffed rice. Press the mixture into mini silicone muffin moulds or oil a mini muffin tin. Bake for 20 minutes until golden. Cool, then turn out.
