Use an ice cream scoop when you are filling paper cases or muffin tins – decide how many scoops you need to fill each hole or paper case and repeat. It means that the cakes will bake evenly because you have the same amount of batter in each.

If you find that you haven’t got enough batter to fill each ‘hole’ in the muffin tin, half-fill the empty holes with water and it will help you to get an even bake.
