Salmon and Horseradish Canapés

Why buy expensive canapés when you can make your own easily? These little salmon and horseradish crackers are easy to put together but they look very sophisticated. Serve them with a chilled glass of any French white wine – a Viognier would be excellent.

Makes 24 canapés

300ml of creme fraiche
3 tablespoons of horseradish sauce
1 tablespoon of lemon juice
3 fronds of dill, chopped finely
Salt and pepper
8-10 slices of smoked salmon
24 cheese biscuits or crackers

1. Mix the creme fraiche with the horseradish sauce and lemon juice. Add the dill and stir. Season with salt and pepper to taste.

2. Cut the salmon into small pieces to fit the size of your cheese biscuits. Spread each biscuit with the creme fraiche mixture and top with smoked salmon.
