Melting cheese with Cranberry and Pistachio

Baking a whole cheese in the box it arrives in makes a surprising starter or cheese course.

Ingredients

2 tablespoons of honey
1-2 tablespoons of dry white wine or Kirsch
1 whole ripened soft cheese (for example Brie, Camembert or Pont-l’Évêque) in its box
1 tablespoon cranberry sauce
30 pistachios, shelled (reserve some for garnish)

Instructions

1. Preheat the oven to 200C/400F/Gas 6. Mix the honey and white wine or Kirsch together.

2. Place the brie round in its box on a baking tray. Bake for 5 minutes until the cheese softens slightly.

3. Make a few slits in the cheese with a sharp knife. Spoon the wine mixture over the hot cheese. Cook for another 15-20 minutes or until the centre of the brie is hot and melting. Spoon over the cranberry sauce and sprinkle over the pistachios and let everyone help themselves with a spoon. (Be careful, it will be hot.)

Did you know? Pistachios are rich in protein, fibre and high in potassium and antioxidants and contain healthy monounsaturated fats which may help to reduce cholesterol. A small handful every day is a good target. Avoid salted pistachios so you don’t undo their good work! 

Melting cheese with honey and walnuts

Ingredients

2 tablespoons of honey
8 walnuts, shelled and crushed
1-2 tablespoons of dry white wine or Kirsch
1 whole ripened soft cheese (for example Brie, Camembert or Pontl’Évêque) in its box

Instructions

1. Preheat the oven to 200C. Mix the honey, walnuts and white wine or Kirsch together.

2. Place the brie round in its box on a baking tray. Bake for 5 minutes until the cheese softens slightly.

3. Spoon the nut and wine mixture over the hot cheese. Cook for another 15-20 minutes or until the centre of the brie is hot and melting. Serve with wheat crackers and let everyone help themselves with a spoon. (Be careful, it will be hot.)

Recipe note: Use a flavoured honey such as lavender or buckwheat (which you will find in the Polish or Moldovan shops) to give a different dimension.
