Baked Cheese with Maple Syrup, Almonds and Thyme

Make this in the microwave where it takes just minutes. Serve with breadsticks for dipping.


1 round or triangle of Brie, Camembert or Époisses, removed from its box
3 tablespoons maple syrup or runny honey
20g slivered almonds, lightly toasted
1 sprig thyme, leaves only
2 pears, sliced thinly
Breadsticks or toasted baguette to serve


1. Place the cheese on a microwave-safe plate and microwave for 30-40 seconds on high until soft but not collapsing.

2. Place the cheese gently into a serving dish so it doesn’t collapse. Spoon the maple syrup or honey over the cheese and sprinkle with slivered almonds and thyme leaves. Serve with slices of pear and breadsticks for dipping.

Recipe note

– Cut the pear into slices just before serving so it doesn’t turn brown.

– Sprinkle the cheese with a handful of golden sultanas. You can marinate them first in some sherry for an hour before.

If the brie comes in a box, you can also bake it in the oven in its box for 20-30 minutes at 200C/400F/Gas 6.  Don’t microwave it in a wooden box!
