Don’t throw away stale bagels – instead turn them into bagel chips! Serve them with dips, spread with homemade pesto or with our Pepperonata or make a quick pepper spread by whizzing roast peppers with cream cheese and olive oil.
How to make bagel chips
1. Cut the stale bagels into thin slices. Bake on a baking tray in an oven preheated to 190C/375F/Gas 5 for up to 10 minutes or until golden. Eat them plain or brush with olive or flavoured oil while still warm.
To make herb bagel chips, sprinkle over dried oregano and brush with oil before baking.
To make garlic bagel chips, rub the bagel slices with a cut clove of garlic after they come out of the oven and brush with olive oil.
You can also freeze the bagel chips when they are cool – defrost and reheat them briefly in a warm oven to crisp them.
Quick Breakfast Bagel recipe
1. To make the breakfast bagel you see in our photo above, fry onions in butter and olive oil until golden and fry an egg separately in olive oil until crispy.
2. While the egg is frying, toast the bagels on both sides. Spread the bottom half of the warm bagel with cream cheese and tomato relish or your favourite mustard. Top with the fried onions, add a slice of Parma or Serrano ham or a good fried rasher, and add the egg on top. Add the top of bagel and press lightly.
